Chef Aziz came to the Capaldi from the kitchens of the Hotel Royal Mansour, one of Marrakech’s finest dining destinations. Working with Michelin-starred chef Yannick Alleno, Aziz became expert in bold gastronomic techniques such as molecular and vacuum cooking. 


Chef Mounir honed his talents at Michelin-starred eateries across Europe and the Middle East, including Restaurant Guy Savoy in Paris. His cooking takes inspiration from these travels, bringing together the best of French and Italian cuisine in a North African setting.
